If you go to NT MS makes a very, very nice sniffer that comes with SMS.
They include a bastardized version of it with NT Server, but it's not
very useful (It only sniffs packets to and from that machine).  The
Sniffer does not require Server and has many nice options for statistics
and analysis including dumping all traffic to a SQL database if your
feeling really nosy...
