In addition to some of the precautions already mentioned, on the rare
occasions that I've had to allow outside access, I've logged _all_ the
traffic involved (packet contents as well as headers) to a file on a
third machine running tcpdump or snoop.  The captured sessions get
archived indefinitely, too.
