There are a couple of things here. If you want to turn off port 25
together in versions before 4.0(either NT or UNIX), you just don't run
the smtpd. For 4.0(either NT or UNIX), you can turn off any one of the
proxies in the advanced window(in the gateway window->configure menu for
NT; I believe there is an advanced button in the gateway window for
UNIX).
