PGP Digital signatures maybe?

Fact is, it is quite trivial to forge the "From:" address in an email
message and it always has been.

Perhaps you could warn your users that forging email messages is just as
serious as forging a written memo to someone or forging their signature on
a letter and will be dealt with accordingly.

Other than that there is bugger all you can do.
