Mail will blithely rewrite headers left, right, and center, headers it
should never-ever even consider touching.

Yup. The "solution" is a two-parter. One: chuck Microsoft Mail. Two:
install NT Server and Exchange, or set up a real SMTP server.

Won't do any good. Microsoft has made it clear that there will be no
significant "improvements" made to Microsoft Mail.
