I don't use the subject line for automatic folder sorting, as Rich
says, there are better ways of doing that - filtering on other
headers.
However, I like the subject prefixes too, precisely because I don't
use automatic folder sorting. I can scan the list of message subjects
in my mail reader and quickly see which ones are coming from which
mailing lists - or at least for the mailing lists that use subject
prefixes.
I don't understand Rich's comment about breaking mail programs that
sort by message headers. Messages could still be sorted, but they'd
also be broken down by the mailing list. What's broken about that?
