You can already do this with the Mj2 alpha, since you can have a taboo
"match" expression which bounces the message if it fails to match a line.
The ability to bounce to poster (with the message of your choice) or bounce
to owner isn't very fine grained yet, but I'm implementing that soon.

Note that this isn't just a 'bounce_unless_subject' variable, though.  You
actually have to understand the access control stuff to get it.
