In exchange, select the "Edit -> options" pull down menu.
click on the "Mail format" tab.
in the "Message format" section of the window select "Plain Text"

  Yellow, everyone! :)

  I administer three lists and have configured them all to
  reject messages composed with "help" of HTML. Some email
  clients has HTML enabled by default ie. Outlook Express
  and Exchange. I know how to turn off HTML in OE, but today
  I received an email from a list member saying:

  This guy is using Exchange...which I don't. Let me add that
  I am no novice and _if_ I had Exchange I would know what to
  tell him...

  Is there anyone on the list who can tell me how to turn off
  HTML permanently in Exchange? Actually, if anyone is using
  Eudora and other common email clients I would welcome
  instructions on these too! :) I would be very a very nice
  addition to my Netiquette page. (Have a look at
