You could filter list mail via a script which strips all the headers and
identifying information, or use procmail/formail for the same purposes.

But somebody may include information in the body of the post which
identifies the origin of the mail.  You could moderate the list, as a
final check against this, but then the list would not be completely
anonymous, as the moderator may determine that one email came from a
particular source.
