Bouncing really ISN'T the best option. Filtering out just
the attachment and letting the rest go through is much better.

Demime leaves a tag when it removes something, no bounce option.
The author has said he will add an option to send a copy of
the unedited msg to a second address when something is deleted,
but it's not in there yet. Give it a few weeks???
