Depends on your mail server I suppose...  I'm running RedHat with Sendmail. 
Instead of the default mail proc, we've gone to Amavis (www.amavis.org).  This
will pass mail (incoming and outgoing) through yuor choice of Unix virus scanner.
 I use Sophos Sweep (www.sophos.com), but you can use almost any of them.  Check
amavis.org for details...
