In Outlook you can specify how particular recipients recieve email.
When you open a Contact, check the box that says "send email in plain
text". That way, your list owner can send emails by default in 
rich text/html, but messages sent to the list (he needs to have a 
contact entry for the list) will be sent in plain text.
