I just had do do a similar thing when retiring an old machine.
I took the following steps.:
1) In the /opt/majordomo/old-list.config I changed the
reply-to fields to the new list-name@newserver.com
2) I put a header in the old-list.config so that if anyone
used that email address it would tell them to change the
email to the new address
3) I let everyone know what I was doing.
People would not change the email address despite multiple
messages telling them to change it. Once I did those steps
it only took 1 message sent to the wrong address to solve
the problem.
The header Almost scared the listmembers and they changed
right away.
Something similar might work for you.
