StuffIt is sometimes a little weird. tar zxf filename.tar.gz always works.

see /etc/httpd/(httpd.conf |httpd_macosxserver.conf)

You need to edit /etc/httpd/httpd_macosxserver.conf by hand to fix this. Be sure to run apachectl configtest before restarting Apache. httpd_macosxserver.conf is somewhat tricky, back up before you edit.
